Recipes

A long time ago my sister Jaime asked me for this recipe and I don't think I ever got it to her so this is for you Jaime.

We absolutely love this salad and I make it almost every week. It makes a huge bowl full. Our kids love veggies so they eat this up.

Greek Salad

- 4 cucumbers, diced
- 1 red pepper, diced
- 1 orange pepper, diced
- 1 yellow pepper, diced
- 4-5 tomatoes, diced
- 1 medium red onion, diced
- olives, sliced or whole (whichever you prefer)
- feta cheese, cubed or crumbled
- Italian or Greek Salad dressing

Dice all the veggies and place in a large bowl. Add olives and feta cheese. Mix everything together and add more cheese or olives if necessary. Pour about 1/3 of the jar of dressing and mix to coat all the veggies. Marinate a couple of hours in the fridge before serving.

For those of you that live by the green barn you are very lucky. I use to get all the ingredients there. They sell feta cheese from Apple farms in Ferndale and its very inexpensive and they have lots of different flavors or if you have your own goat or cow you can make your own.

I've been making potato wedges for a long time and we love them but the kids never eat potatoes very well no matter how I make them so I started making seasoned french fries and the kids are eating them. They remind me of the waffle fries my sister Jaime use to bring home from George's restaurant when she worked there.

Seasoned Potato Fries

- 4 large potatoes sliced into 1/4 inch strips
- 2 Tbls. oil
- 3 Tbls. flour
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1 tsp. paprika
- 1/2 tsp. seasoning salt
- 1/2 tsp. black pepper

Preheat oven to 450 degrees. Place potato strips in a large plastic bag; add oil. Seal bad and shake gently to coat. Pre-mix seasonings and put all at once into bad; shake again. Place seasoned strips on a baking sheet coated with nonstick cooking spray.

Bake the potato strips at 450 degrees for 25 to 30 minutes or until crispy. Serve hot.

For about a month now I've been making coffee creamer. I love the flavored creamers but hate the fact they are just filled with chemicals and nothing dairy. A friend had a recipe on face book one day and I tried it and have tweaked it a little for our tastes and we love it. If we had a goat or cow I would use the cream they give and it would be even better.

Coffee Creamer

- 1 can sweetened condensed milk
- 1 1/2 cups half and half
- 1 Tbls. vanilla

I pour everything into an old flavored creamer bottle and shake and keep in the fridge. You can also use a quart jar with a lid but it doesn't pour as well.
