A few months ago we were looking for new recipes and I wanted to develop some weekly menus with shopping lists to make things easier and more organized.
Arlen came across this website; http://www.hillbillyhousewife.com and she has a couple of meal plans and we decided to give them a try.
She has a $45 a week plan and we tried it. Good cheap food and we figured we fed Arlen, Theya and I for the week for only $20!
My naturopath told me to start eating more 'beans and greens' and this website has a lot of great Bean and Lentil recipes.
A couple of weeks ago I mentioned that we ate Chickpea Tacos, its from this website as well. Here's the recipe. I encourage you to check out this site as well and let me know what you think. I know it'll help you save money.
Chickpea Tacos
2 cups or 1 can chickpeas, drained
2 cups salad greens
1/2 cup organic sour cream
1 avocado, chopped
fresh cilantro to taste
1 cup salsa
juice of one lime
one clove garlic
corn taco shells
Place avocado in bowl and mash. Add chickpeas, cilantro, garlic and lime juice. Add sea salt, cumin and pepper to taste. Fill taco shells with chickpea mash, top with greens and sour cream and salsa. These are excellent with a Mexican style rice.
